400g (1 pouch) Hello Friend Foods Cheese Sauce
Enough corn chips for 2 people
1/2 cup TVP, soaked
2 tbsp taco seasoning


2 avocados
1/2 cup coriander, chopped
1/2 red onion, diced
1/2 lime juice
1 tomato, diced
salt and pepper to taste


3 tomatoes
1/2 cup coriander
1/2 red onion
1/2 lime juice
1/2 tsp dry oregano
salt and pepper to taste

  1. In a bowl, soak the TVP with vegetable stock for 10 mins. Once the water has been absorbed, add the taco seasoning and mix through.
  2. To make the salsa, add the tomato, onion and coriander to a food processor or blender. Pulse briefly until the tomatoes start to break down but before it turns into puree. You can also chop them by hand. Transfer to a bowl and add the lime juice, salt & pepper and mix.
  3. To make the guacamole, add the avocado to a bowl and mash with a fork. Add the diced tomatoes, onion, coriander, lime juice, salt and pepper. Mix through.
  4. To prepare the nachos, layer the corn chips inside an oven safe baking dish or bowl. Add the TVP mince and salsa. Drizzle with cheese sauce and place under the grill for 5-10 mins until the cheese sauce starts to turn a golden brown.
  5. Remove and top with extra salsa, guacamole and plant based sour cream (optional)
  6. Enjoy!
