200g (1 packet) Hello Friend Foods Haloumi

2 burger buns

1 tomato, sliced

Handful leafy greens (like lettuce or spinach)

1 tsp olive oil

Fresh Tzatziki:

150g coconut or plant based yogurt

1 cucumber, diced

2 cloves garlic, minced

1/2 lemon juice

1 tsp olive oil

1/4 cup fresh dill

salt & pepper to taste

1. Prepare the Tzatziki by combining all ingredients in a bowl and mix together. Taste and adjust with salt & pepper. Add extra lemon and/or extra dill for more flavour.

2. In a large pan, heat the olive oil on medium high. Cut the Haloumi into strips and cook in the pan for about 5 mins each side, until it turns a golden brown. Transfer to a plate lined with a paper towel.

3. Layer the inside of the burger bun with the greens and tomato. Top with the pan fried Haloumi and add the Fresh Tzatziki.
4. Enjoy!
